Bill, the gender of your children is unrelated to EDS. EDS affects men and women. If your wife has EDS, then your daughters' EDS genes come from her. Their gender is determined by you. Each person has chromosomes. Women have two X chromosomes and men have one X and one Y. When children are conceived, they receive a chromosome from each parent. They always receive one X from their mother, and they have an equal chance of receiving either an X or a Y from their father. If the father passes on a Y chromosome, he will have a son. If not, it will be a daughter.
